Incidencia De Salmonella Enterica Sub Especie Enterica Serotipo Enteritidis En Fincas Productoras De Huevos Para La Mesa En Puerto Rico

The egg industry of Puerto Rico has a local production of 15.8 million dozens of egg and 26.8 million dozens are imported. The eggs are one of the most nutritious foods on Earth and can be part of a healthful diet. Nevertheless, they are perishables like meat and fish. One bacteria that can cause a disease transmitted by foods and can be present in eggs is knows as Salmonella enterica Serovar Enteritidis (SE). The main objective of this investigation was to do a risk assessment of the presence of this microorganism in Puerto Rico Laying Houses. The poultry houses were selected randomly, covering the five regions of Puerto Rico. The sampling included environmental samples of feces, feeders, drinkers, walkways, egg belts, and de-escalators where the eggs pass. The detection of Salmonella spp. was carried out according the Food and Drug Administration (FDA) official method ( Detection of Salmonella in Environmental Samples from Poultry Houses ) and modified according with the method used by the Dr. A.M. Saeed, according to personal communication. The confirmation of the colonies of Salmonella spp. as Salmonella enterica Serovar Enteritidis was carried out by serological tests. The results of this study demonstrated the presence of Salmonella spp. in eight farms of the East, West, and Central regions. The results were distributed in all the analyzed areas, being feces, the area of greater incidence. The confirmation for Salmonella enterica Serovar Enteritidis was negative in all the cases.
